Okay *technically* spring break begins tomorrow, so I'm jumping the gun a little bit on this one, but after a long week nothing sounds better than chocolate, caramel, and something salty- all at the same time. That's what I set out to do, and I'm pretty pleased with the results!
Ingredients:
2 cups flour
1 3/4 cups flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup water
Preheat oven to 350 degrees. Pop cupcake liners into pan. Stir together dry ingredients. Add eggs, milk, oil and vanilla and mix for 2 minutes. Pour evenly into prepared pan.
Bake 30 to 35 minutes. Let cool completely.
Frost with a big glob of chocolate frosting. Crush pretzels to dip and round out the frosting. Embellish with a pretzel! Drizzle caramel syrup over the top.
Fail all your midterms all week because you are so busy making/eating cupcakes.
